Ingredients
2 eggs
1 tsp butter or olive oil
½ avocado, sliced
½ kiwi, peeled and sliced
3–4 strawberries, halved
¼ cup blueberries
2 cherry tomatoes, halved
A handful of spinach or mixed greens
Salt & pepper to taste
Directions
Make the scrambled eggs:
Whisk eggs with a pinch of salt.
Heat butter in a nonstick pan and cook eggs over low heat, stirring gently until creamy and soft.
Prepare the plate:
Arrange spinach as a base.
Add scrambled eggs in the center.

Season & serve:
